At the gateway to Garajonay National Park, in the small hamlet of Las Hayas, there’s a place where cooking isn’t measured in stars, but in roots.

There, where the mountain mist blends with the aroma of freshly made potaje, Doña Efigenia Borges has spent more than half a century offering food and conversation to those who know how to slow down.

It all began with a small little shop, back when there were hardly any houses in the area—no electricity, no comforts. What there was, was hard work, fertile land, and a woman with vision and courage. With produce from her garden and know-how passed down from generation to generation, she built what today is far more than a restaurant: it’s a life experience.

               ""

               ""

Her cooking, made with what the land provides and without artifice, is deeply traditional and naturally vegetarian. Not because it’s fashionable, but because it’s true to a way of seeing the world. Stews, escaldones, almogrotes, mojos and broths that taste of history and the mountains, served with the warmth of someone who has spent decades welcoming walkers and visitors with the same honest smile and the same steady hand.

Here there’s no menu and no clock: there’s conversation, memory, slow fire. And every dish is a story, a way to honour the past and to endure through simplicity. Anyone who walks through the doors of La Montaña doesn’t just eat: they listen, they learn, and they take a piece of the island with them.
